Sausage Minestrone
I invented this soup when it turned to soup season in London. It’s very easy to make, a portion reheats in 3 minutes in an 1000W microwave, and so I typically have it as a weekday lunch along with some toast.

ingredients:
- Heck Pork Sausage Rashers. 2 x 300g pack
- Tesco Frozen Soffrito. 1kg pack
- Tinned Chopped Tomatoes. 2x 400g cans
- Very Lazy Smoked Chopped Garlic. 2 tablespoons.
- Courgette. 200g
- Sweetheart (hispi) Cabbage. 100g
- Worcestershire sauce. 2 tablespoons
- Heinz Tomato Ketchup Zero Added Sugar & Salt
- Tesco Crushed Chillis (flakes). ½ to 1 teaspoon depending on taste
preparation steps:
- Dice the courgette into 1cm pieces
- Shred the cabbage into strips about 1cm across.
cooking steps:
- In a deep large lidded saute pan, about 28cm across, lay out 1 pack of the sausage rashers.
- Put on a medium heat.
- As the rashers cook, use a wooden spoon or wooden spatula to chop them lengthways and then across into half inch squares.
- Push the cooked squares into the side of the pan and fill up the pan with the next step of rashers.
- Repeat step 3 with the remaining rashers.
- Add the chopped garlic and stir into the pork.
- Stir in the courgette
- Stir in the cabbage
- Add the soffrito and stir in, being careful to mix it through the other ingredients.
- Add the ketchup, worcestershire sauce and canned chopped tomatoes, mix in carefully.
- Add ½ to 1 teaspoon crushed chilli flakes. If you are not sure about your spice preference you can always leave out and serve at the table.
- Add a large pinch of flaky sea salt and freshly ground black pepper.
- Bring the soup to a boil, then turn down to a simmer.
- Put the lid on, turn down the heat further if needed to continue simmering.
- Check after 45 minutes that the bottom of the soup is not catching.
- After an hour, the soup should be a fairly thick stew consistency. Serve or portion out if you are meal prepping - makes 7 servings.
